Ode to Titi Edna

Wow, it has been WAAAAY too long since last I posted here. I guess I let life get in my way. While, I still struggle with what exactly I want this blog to be, I hope not to let it go for as long as I have.  That being said, I wanted to be sure to share this dinner moment in our lives.

Briana and Titi Edna

My beautiful sister Edna passed away in February, 2009.  Among our fondest memories of her are our fond memories of some of the delicious recipes she prepared.  My daughter Briana's favorite was her "Chicken Broccoli Casserole".  It was a staple at many of our family dinners.  Since her passing, it has been a missing piece at family dinners.  It appeared that the recipe was lost.  Briana was very disappointed, but she kept asking my brother-in-law Tony (Edna's husband) if he happened to find the recipe among her things.

In a stroke of luck earlier this week, while looking for another recipe in one of Edna's cook books, Tony did indeed find Edna's "Chicken Broccoli Casserole" recipe.  He called Briana and was able to give her the recipe.  She was VERY excited and couldn't wait for her chance to make it.

So yesterday, I was treated to a delicious meal, made with a whole lotta love in memory of a beautiful woman.  I am sure that Edna was looking down on Briana with a big smile on her face as Briana made this dish in her honor and memory.

Thank you Brie for a delicious dinner, and thank you Edna for your inspiration!
